Florentines

I do love The Great British Bake Off but rarely is there anything vegan for me to bake… And then Florentines were mentioned. Other than a bit of butter (easily substituted) we have a deliciously vegan treat. This recipe started as one from the Guardian’s wonderful “How to make the perfect…” Series but I have messed around with it enough to feel I have made it my own.

  • 45g butter substitute
  • 65g brown sugar
  • 60g flaked almonds
  • 100g dried fruit and candied peel (including some ginger)
  • 60g chopped nuts (I like pistachio and walnut)
  • 20g plain flour
  • pinch of salt
  • 100g dark chocolate

Heat at the oven to 160 oC

Line two baking sheets with baking paper

Heat the butter substitute and sugar in a pan until it just starts to boil and turns into a runny caramel.

Mix the other ingredients in a bowl and then mix in the caramel. Combine well.

Work quickly before the mixture cools too much and sets. Place a spoonful of mixture on the baking paper and spread out as thinly as you can without leaving any holes. Repeat.

Bake for 10 minutes until the edges are going gold.

leave to cool on the tray.

When cool melt the chocolate and coat one side. Leave to set and then eat with good black coffee đŸ˜ƒ
