This hits the spot. A rich tomato sauce and the world’s quickest, easiest and cheatiest (it’s a word) meat-free meat balls. I don’t usually use processed foods but this seems to work really well and sometimes you need to be able to throw together something delicious and nutritious in a hurry.
4 veggie sausages (Linda McCartney works well)
1 large red onions sliced
6 mushrooms sliced
1/4 cup of mixed pitted olives
1/4 cup of chopped sundried tomatoes (sun blushed type works best. Nothing too leathery)
2 cups/1 jar passata (sieved tomatoes)
2 large handfuls of spinach
Handful of roughly chopped basil
2-3 ciabatta sliced in half
4-6 tbsp olive oil
2 cloves of garlic crushed and finely chopped
1 tbsp thyme chopped
1 tbsp rosemary chopped
1 tsp of sea salt
Place the sausages under a grill until cooked (about 10 minutes). In the meantime fry the onions and mushrooms on a low heat in a saucepan. When the sausages are cooked and the onions are tender cut the sausages into quarters and add to the pot. Add the olives, sun dried tomatoes and passata. Simmer gently for 10 minutes. Add the spinach and basil a couple of minutes before serving to allow the spinach to wilt down.
While the sauce is cooking mix the oil with the garlic and herbs and brush on the ciabatta. Place in a warm oven.
Serve the sauce over pasta with the ciabatta.
