I have just got back from a lovely break at Center Parcs in a self catering lodge. Lack of space in the car meant that we couldn’t take food with us (boo!) and the local shop didn’t leave us spoilt for choice and I have been craving this dish all weekend. Luckily enough veggies survived the weekend in the fridge and I was able to satisfy my weird vegan cravings within hours of getting home.
This is a really easy dish and a great way to clear out the vegetable box.
- 1 cup brown rice
- Canola/rapeseed oil
- 1 block smoked tofu
- 1 courgette – diced
- 1 red chilli
- 6 mushrooms – sliced
- 1 yellow pepper – thinly sliced
- 4 large handfuls of Kale
- Soy sauce
- Sesame Oil
Simmer rice with two cups of boiling water for 30 minutes.
Add kale to steamer for last ten minutes and then drain well.
Fry courgette and tofu until browned. Add other veg until cooked to your liking. add drained kale towards end. Add soy and sesame oil to taste and stir well. Serve over rice.
I wolfed this down before I remembered to take a picture but it looks lovely, tastes great and is full of goodness.
