It is the TR24 in just a couple of days and I have had a productive morning in the kitchen getting food together to fuel Mrs Herbifit’s solo 24hour run. One main source of fuel will be this.
Quinoa with roast veg. Quinoa is a seed from South America that is a complete protein as well as a source of micro-nutrients. The roast veg will add more carbs and the olive oil fats. A few homemade flatbreads will finish off the meal.
1 cup Quinoa
1 red onion
1 small aubergine
4 or so tomatoes
Nice and easy this one. Simmer quinoa in twice as much water, covered, for 20 minutes until water is absorbed.
At the same time put chopped up veg in an oven to roast with a drizzle of oil.
When it is all cooked, mix it together with the paste, olives, tomatoes and any other spices you fancy (I like smoked paprika).
Serve warm with pitta or chill for running events.
